


Headwaters Distillery is a family run business spanning three generations, based in Tākaka, Golden Bay. Operating since 1996, it began in a converted goat milking shed and now runs a custom built 1,000 litre pot still. The distillery triple distils single malt spirit in small batches using organic barley and water drawn from the Anatoki valley, maturing it in virgin American and French oak casks.
I recently had the pleasure of visiting Headwaters Distillery again in Takaka, Tasman, and I was absolutely blown away by their whiskey. I could feel the passion and dedication that goes into every bottle. The team was incredibly welcoming and knowledgeable, explaining each step of their craft distillation process and the local ingredients they use. What really sets Headwaters Distillery apart, in my opinion, is the smooth-yet-complex flavor of their whiskey. It has layers of subtle spice and a gentle sweetness that remind me of honeyed cereals and soft fruit notes. Headwaters Distillery’s product to hold its own against premium labels. The finish is long and warming—just the right amount of heat to highlight the craftsmanship without overshadowing those nuanced flavors. I appreciate Ryan's commitment to sustainability, it's reflected in both Headwaters grain sourcing, and their thoughtful approach to distillation. It’s clear they place a strong emphasis on the art. Whether you’re a seasoned whiskey connoisseur or new to the spirit or Tasman, Headwaters Distillery is a must-have. You will walk away with a deeper appreciation for small-batch organic distilling.
